GUY COWAN I love traditional pork, sage and onion stufi ng and bread sauce. To ensure that it’s as good as it can be: lots of sage and onions and made slightly in advance. Bread sauce made when needed with plenty of double cream, butter and mace. I’m also very partial to foie gras en croute with trufl e, if anyone’s wondering what to buy me.
KENNY WHITTAL Roast chestnuts. Roast them slowly so they’re lovely and juicy on the inside; about 150 degrees for 30 minutes. AISLA STANIFORTH Favourite Christmas food has to be goose. Harder to do in a restaurant but for at home it’s fabulous.
