So what does your role actually involve? Ensuring the smooth running of a relaxed, modern, buzzy restaurant. Essentially making sure every customer has a great experience. I have been lucky enough to work in some fantastic establishments such as The Balmoral Hotel’s Palm Court Bollinger Bar, Seagrass Bar and Grill, Melbourne and Swell Restaurant, Sydney. I aim to make sure I use the extensive wine and food knowledge I’ve gained along the way every day at Café Fish, passing it on, not just to customers, but to staff as well. We have quite a small team, so I try to make it feel like a family and create a good working environment. Since arriving I have created a new wine list, and implemented a new, more effi cient, service element in the restaurant.
Best / Worst Aspects? Best – I have a great relationship with head chef India, which always makes me happy to walk through the door to work. As our menu changes daily, I get to see (taste test, you might say) all of our new dishes created. Our great suppliers help us change our wine list, so sampling wines is a great perk! Worst – The only slight negative is working most Friday and Saturday nights, for the simple reason that the majority of my friends have the standard 9–5 lifestyle, which I certainly do not. This is a small price to pay and something I accepted before starting out in the hospitality industry. Looking back, what advice would you give to a young Simon at the start of his career? Keep looking for that new opportunity, be it in your current workplace or elsewhere. There’s always going to be someone with a better knowledge of certain areas of the job, be it a Sommelier or a Maître d’, so learn from them! Enjoy your job 100% is the main thing, so if you don’t – you know what to do!
and fi nally . . . Tell us more about what is currently going on at Cafe Fish? We have just been recommended in the Michelin Guide 2010, which is a great achievement since this is our fi rst year open, which is fully deserved. We are also currently offering a free bottle of house wine between two when customers buy two main courses at lunch (available Tuesday–Saturday) or two two course dinners (available Tuesday– Thursday). The menu changes daily.
