I The type of food we choose to eat. where it comes from and where we buy it has a massive effect on our environment. Food is big business. Like anything in thrall to big business. there are ethical issues. Why is the fantastic bounty provided by the sea being ravaged? Why do things like BSE appear? Why are we pumping fossil fuels into the atmosphere in order to fly food halfway round the world?

Even on a straightforward. personal level, nothing affects our health more than food. Yet. thanks in large part to the persuasive power of big food business. we buy and eat huge amounts of food that has been processed. speeded up or artificially manipulated. All these things enhance the profits of the big food businesses. but few of them enhance the taste of the food. Slow Food is an international organisation that believes we should be doing more to protect taste. In this countiy. as well as places like Italy where the movement started. taste is being homogenised. Slow Food encourages people to care about the flavour of the food we consume. understand more about where it comes from and to celebrate that the simple act of eating should be a plea8ure.

Slow Food isn't about rules governing what's right to eat and what's wrong to eat. Nor is it about long meals. It's about taking a stand against not just fast food. but the way our world is playing fast and loose with eating. one of the most diverse pleasures in life. Scotland is better placed to make the leap than you might realise. There is a huge range of wonderful food being produced here that can be considered slow. from artesan cheese to Arbroath Smokies. And with Slow Food UK holding its founding congress on Skye this Summer under the leadership of Fiona Richmond. the time may well be ripe to prove that Scots can be as Slow as anyone else in Europe.
