The Good Cook's Encyclopedia First things first, this isn't a recipe book, although it does contain recipes. Rather it's an A to Z of practically everything that you might ever need to do in a kitchen, a complete guide to buying, preparing, cooking and serving food.
It details the sort of skills and knowledge which would have been passed down from parent to offspring a couple of generations back but which seem to have been taken off the menu in the age of the supermarket. Clear and concise chapters cover every major food group, explaining how to tell whether food is fresh or of good quality, when it is in season and how to store it.
The section on food preparation is particularly comprehensive, covering everything from the simplest task such
as soaking and boiling pulses to creating guards of honour from racks of lamb. Each process is broken down into easily digestible steps, explained clearly and complemented by pictures which look good as well as being helpful.
All the different methods of cooking are demonstrated and the theory behind their application is pointed out - slow, wet cooking such as stewing being used to tenderise meat while fast, dry cooking methods, such as grilling, seal in the flavour of vegetables, fish and meat.
Having gone to all the effort of selecting good ingredients, skilfully preparing them and cooking them with flair, it would be a travesty not to present them with due care. The chapters on carving and decoration are useful if you’ve never quite mastered the Sunday roast but there are also reminders not to forget the basics like
