Mushrooms are wonderful when added to a casserole to soak up the flavours of the meat: a handful of golden chanterelles thrown into a mild curryjust before serving will knock you out (not literally). and a thin slice of Cepe on top of your bowl of soup changes everything. Giant puff balls filled with your favourite stuffing. wrapped in bacon and baked with olive oil are stunning. Chanterelles fried with butter, garlic and strips of smoked bacon and then covered with cream. is the best carbonara sauce for pasta. lf

you've hit a glut of mushrooms. load a pan with them and enough melted butter to cover. sizzle them a while and then pour them into a container and freeze. This way it's possible to create gourmet snacks all winter long.
lfyou want to try mushroom hunting make sure you have an expert guide. human or paperback. Learn to recognise the poisonous ones first. There are only a few but they are deadly. the most dangerous being the Death Cap. the Destroying Angel and the Cortinarius Specissiosimus. which kills you by destroying your kidneys so that you are poisoned by your own
2 excrement. Nasty. Never eat a
mushroom that you‘re not sure of. only eat ones that you have definitely identified as edible (and palatable — there are plenty that don't upset your
tummy but might upset your guest's). If
you want expert advice. the Mycology Department at the Royal Botanical Garden in Edinburgh and the Glasgow Botanic Gardens will identify your
; basket-load for you. The Edinburgh-
based Botanical Society for Scotland runs Fungal Forays into local wild
spots which are a great way to start off. I
The next ones are 8 and 22 October. If you prefer to forage independently and find a good patch of something tasty. don‘t be too greedy. Pick the big ones which will have already spored but leave the baby ones — they'll be full size in the next few days and will send off a few billion spores. so you can only profit by your restraint.
