Like many of the recipes on Suruchi’s varied menu, this was borrowed by proprietor Herman Rodrigues from his wife Aba’s repertoire. It is typical of the restaurant’s dishes in its lightness, freshness, and crunchiness of texture. GAJAR GOBI — Carrots and cabbage with ginger and fresh coriander (serves at least tour as a side dish) fresh ginger (about 2 inches) peeled and coarsely chopped
1 lb carrots chopped into line strips or grated
1 lb cabbage linely sliced
6tbs vegetable oil
1/4 tsp whole black mustard seeds
1 tsp mash dal
1 tsp chana dal
1/4 tsp ground turmeric
1 teacup coarsely chopped iresh conander
1 hot chilli washed and finely sliced
FLAVOUR OF THE FORTNIGHT

1 tsp ground cumin
1 tsp garam masala
1 tsp salt
Put the ginger in a blenderwith 3 lbs of
water and blend until smooth. Heatthe
oil in a lrying pan over medium heat. When very hot, add mustard seeds and
' the two dals. When mustard seeds
begin to pop, add the ginger paste and turmeric. Fry for about two minutes stirring frequently. Add chopped coriander and green chilli and cook,
‘ stirring, for anothertwo minutes. Add
carrots and cabbage and cook for live minutes more, stirring frequently. Now add coriander, cumin, garam masala,
salt and three tablespoons of warm water. Stir for two minutes. Serve with
hot chappati or paratha.
