I Parador 26 William Street, 225 2973. Tapas Bar: 1 lam—11pm (later ifbusy; 1am Fri and Sat). Restaurant: noon—2.30pm, 6.30—10.30pm. Edinburgh’s only genuine, Spanish-run tapas bar. Pepe offers a selection of more than 30 morish platefuls at all times of day. The restaurant downstairs is pricey. with main courses starting at £8. but it is unique in offering classic Spanish cuisine. Seafood is a

speciality, and the menu changes daily.
I Platlormt Rutland Street, 225 2433. Seven days noon—midnight. Capacious bar adjoining the Caledonian Hotel renowned for lunchtime jazz. The Alex Shaw Trio will be playing every day from 8—16 and 22—30 Aug. Fill your plate with roast meat and potatoes from the buffet and settle down to enjoy. The slightly delapidated splendour of the interior only adds to the atmosphere. I Baltaelli's 10 Randolph Place. 225 6060. Mon—Fri 12.15—9.30pm (last orders); Sat 6.30-10.30pm. Not a place to dash in to for a quick bite,
this upmarket Italian restaurant, with its impeccably polite be-suited waiters and formal atmosphere; but for a special evening off the frantic show circuit, it is ideal — the food is very good. Expect to pay around £20 a head.
I Traverse Cale and Bar 10 Cambridge Street, 228 8003. Seven days 11am—2am. This ultra-modern, ultra-sophisticated subterranean space could hardly be more different from the old Traverse courtyard bar. Despite its ‘foyer’ feel, its geometric multi-coloured plush chairs and shadowy corners are already attracting the old faithfuls. The adjoining cafe, Sherry‘s. offers a homely plateful in contrast to the high-style setting. Carrot soup. stovies and coleslaw, moussaka. apple crumble, rolls and muffins: everything is made on the premises, and the choice is different every day. Dinner is served from 6pm, but there is always something in the kitchen ready to be rustled up. Prices are, as yet, very low. main courses from £3.25, salmon sandwiches made to order£1.50.
I Verandah 17 Dalry Road. 337 5828. Seven days noon—2. 15pm. 5—11.45pm. The only Indian restaurant in Britain to be recognised by Routiers, the Verandah has a formidable reputation for expert cooking. A set
meal for two is available for £29.95. The menu also offers several thalis, or selections of smaller dishes, which allow you to sample a wider range of delicacies.
I West End Oyster Bar West Maitland Street, 225 3861. Seven days 11am—2am. The latest addition to the highly successful series of Oyster Bars dotted around the city. Roomy. but not so atmospheric as those in Queen Street and Calton Road. it is still a good place for relaxed drinking, particularly late at night. Food is bistro-style with the emphasis on seafood - last orders for meals are 10pm. Live music - pub bands majoring in cover-version rock — is a feature every evening apart from Tuesday and Friday.
I Whlghams Wine Cellars 13 Hope Street, 225 9717. Mon—Sat Ham—midnight (Fri lam); closed Sun. Intimate and atmospheric cellar bar. with a tasty seafood menu at lunchtime. Popular with West End office workers who like to occupy the booths in the building’s bowels.
I Yumi 10 Melville Place, 226 3579. Mon—Sat noon—2pm, 6.30—1 1pm (last orders 9.30pm); Sun closed. Scotland‘s only Japanese restaurant. Sushi, tempura and other Japanese specialities in a reverent atmosphere with authentic Japanese musak. Expect to pay £10 for lunch, £20—£25 for dinner. excluding drinks.

Fringe companies have always known that people are suckers lor tood. What better way to persuade an audience to watch alternative Shakespeare in a dull morning slot than to lure them with steaming collee and hot croissants, all tor the price at the ticket? Last year we watched the labulous Bobby Baker prancing around the stage in a pair of hand-baked dough antlers and then - lullilllng every housewile’s lantasy- smear chocolate sauce allover a naked male body. Then there was the
Alice. the Knite and the Birthday Cake
hilarious Copstick and Cawley duo who managed to whip up a murder mystery into a culinary extravaganza, the whole story unlolding during the preparation at nlbbles tor a village tete.

is back on the menu this year, so you can taste the evidence and check last year’s verdict.

New shows jumping on the loud wagon include Alice, the Knile and the Birthday Cake, at Greylriars Kirkhouse, a sexual drama set in a restaurant kitchen with a particularly crummy climax - Peter Greenaway eat you heart out. Also at Greylriars, London restaurateur Ken Gray, alias Loyd Grossman, proposes to dish up some culinary classics in the comedy review Cooking With Ken and Ard.
Then there’s Let’s Do Lunch at St Columba's. More laughs, more land — no really this should be good -The Entire Company are working on it. TV and radio sketch-writers most at them, they have produced morsels tor Week Ending and Newsrevue to name but two, but in Edinburgh they are altering a whole lunch and a glass of wine as
part at their show.
It this is not enough, or rather, it you are gagging on culinary puns, you can have a nice cup at tea. Every morning at the Chaplaincy Centre varieties lrcm all over will be brewed lortasting and their histories unlolded. Alternatively, you can be sure at meeting people who take their revered tipple seriously at the Scotch Malt Whisky Society in Leith. During the Festival the Society is opening its doors to the public lor evenings at traditional Scottish storytelling, music and song. The ticket price includes a couple at drams oi llnest malt, but it 210 still sounds steep, consider that it is giving you access to one at the most splendid interiors in the city. (Catherine Fellows)
