Snack attack
To sustain the non-stop night-life enjoyed by the Spanish, you need a constant supply of tapas. Sue Wilson savours a few ofthese mini-meals and reports on their increasing popularity in Scotland.
Perhaps more than any other nation. the Spanish have mastered the art of the snack. While we benighted Brits munch on crisps and Mars bars to stave off those mid-morning or late-afternoon hunger pangs. the Spaniards stroll down to their local tapas bar to partake of anything from olives to marinaded oysters over a glass of beer or dry sherry. ‘Over’ is historically the correct word. in fact. since ‘tapa’ translates as cover or lid. and the tapas tradition supposedly developed from the custom of serving a slice of bread or cured meat with a drink. placed over the glass to keep flies out.
It’s not easy to define precisely what tapas are. since the word refers more to a style ofeating than to a

type of food. Virtually any savoury comestible which lends itself to
nibble-sized portions and is easily eaten with fingers. toothpick or fork
can be served as tapas. They can range from a slice of spicy chorizo sausage with bread to elaborate concoctions involving quail. truffles. frogs‘ legs or baby eels. In Spain. tapas are eaten primarily as an

although it‘s a moot point whether the practice developed to sustain people during the long hours
between mealtimes or the late eating hours evolved to accommodate the
