Calvados varies in style according to the area ol production and the method by which it is distilled. Calvados de Pays d’Auge is distilled twice, while Calvados from the rest ofthe region is only distilled once. There are also differences due to the length of time thatthe spirit has been matured. ‘Hors D’Age’ must be matured in oak for a minimum of 6years, but those known as ‘vieux’, ‘reserve’ or ‘VSDP’ are much younger and have a fruity
freshness.
